Bergedil (Potato patties)

Bergedil/perkedel kentang is a popular Indonesian food. It has a soft and fluffy inside while outside has a crispy egg coating, best to eat as a dish or on it's own.

Here's the simple to do recipe you can try at home.

Ingredients : (makes 8 patties)

4 pcs Potatoes (about 370g)

2 pcs Shallots - thinly sliced

40g Shredded Chicken (can use roasted chicken /steamed chicken)

Chinese celery (kan choy) / Daun sup - cut into 1cm length

Dash of Black Pepper

Dash of White Pepper

1/2 tsp Salt

2 tsp Corn Flour

1 pc Egg

Oil for frying

Step by Step :

1. Heat up oil in wok, fry Shallots till slightly golden. Remove & set aside.

2. Cut potatoes into small cubes.

3. Using the balance oil in step no. 1 above, add more oil for frying potatoes. Heat up, fry potatoes till soft when poke using a fork. Remove & strain away excess oil. Set aside in a big bowl/plate.

4. While potatoes are still hot, roughly mash the potatoes with a potato masher or fork.

5. Add in salt, black pepper, white pepper, corn flour, fried Shallot, shredded chicken & Chinese celery. Mix evenly.

6. Mold into patties shape weighing around 40g each. (you can make to your preferred size)

7. Heat up wok in oil for frying.

8. Dip the patties into the egg wash and fry till golden brown. (I just shallow fry instead of deep frying).

9. Drain away excess oil and serve!
