Baked Maitake Mushrooms

Simple healthy snack - made using Maitake mushrooms. These oven-baked Maitake mushrooms were just lightly salted with a hint of thyme & oregano herbs. This quick baked recipe turns the raw spongy mushrooms into crisp ends on the thinner edges while it's thick stem were still moist and chewy.

WARNING : It's really highly addictive, 1 pack is definitely not enough. Especially if you are making them for mushrooms monsters. They will just gulp down everything in seconds. Make more!!

Maitake mushrooms are also called the "dancing mushrooms" in Japan, "Signorina mushroom" in Italian (means unmarried woman) and hen of the woods. Yukiguni maitake mushrooms are farmed in a facility with unique Japan technology, pesticide free & chemical free that can be enjoyed without washing. And best of all, they are imported from Japan.

Maitake mushrooms are as tasty as they are full of nutrition. It contains Vitamin D that enhances immune system, muscles and bones. It is good for the growth of children. They are anti-oxidants (anti-aging). Maitake contains 2.7g of dietary fiber in 100g. This is about the same amount as one lettuce.

Besides that, Maitake has healing properties that helps boost immune system due to its high alpha & beta glucans. It also regulate blood sugar and cholesterol hence suitable for individuals with diabetes. It helps lower cholesterol, low sodium, fat free and low in calorie.

Maitake contains a kind of "Umami" flavors called "Guanylic acid". This flavour makes Maitake tastier. This mushrooms is so versatile that you can have it roasted, baked, fried, sauteed or stir-fried. You can purchase your Maitake mushrooms at major AEON shopping malls in the Klang Valley.

Ingredients: (serves 1)

120g Maitake Mushroom (1 pack)

2 tsp Olive Oil

Pinch of Dried Thyme & Oregano Flakes *

Pinch of Sea Salt

Dash of Black Pepper

Pinch of Dried Parsley Flakes

*If you have fresh thyme, you can use fresh ones. if you don't have oregano flakes, you can omit them.

Step by Step:

1. Preheat oven to 175C with top & bottom heat.

2. Remove Maitake mushrooms from the pack. Trim away any tough bits of stem or growing medium. Then shred the mushrooms into small clusters - try to make them all about equally in sizes so as to make sure they are cooked evenly. No washing is necessary.

3. In a small bowl, drizzle olive oil, sea salt, dried thyme, oregano and parsley flakes over shredded Maitake mushrooms, mix well to combine (be gentle as they are quite fragile and breaks easily), being sure they are all well coated on every pieces and every sides.

4. Arrange them on non stick baking sheet and spread them apart. Make sure no overlapping each other.

5. Place baking tray in the oven and bake for 5 minutes using top & bottom heat. (Placing the tray at lowest rack)

6. Then change the oven setting to convection fan (if your oven has it) still at 175C, bake for another 10 minutes. They should be sizzling and browning a bit at the thinnest part of the mushrooms while those smaller bits will turn crispy. And it will shrink about 50%.

7. Let them cool on the baking sheet and then served as a side or snack.
