Claypot Clams in Lemongrass Broth

Easy and delicious dish.

Ingredients:
500g Clams
1 nos Lemongrass (bruised)
1 tbsp Fish Sauce
1 tsp Lemon Juice
3-4 slices Ginger (julienned)
200ml Water
1 tbsp Cooking Oil
Method :
1. Heat up oil in claypot.
2. Saute ginger and lemongrass till fragrant.
3. Add in water and bring to a boil. Simmer for 5 mins.
4. Season with lemon juice and fish sauce.
5. Add in clams and cook till all the shell open up and all clams fully cooked. (Once the shell open up, just cook them for about 2 mins will do. Not to overcook them, otherwise the meat will shrink and turn hard)
6. Turn off heat and serve at once.
