Does this drink taste nice? I would say, very subjective. If you have tried raw beetroot juice before, you will know the earthy taste in it. Some people love it while some don't. Even after boiling it, it's still taste much the same, despite the color turning into bright reddish. And you can taste a very very slight barley taste in your drink. Definitely not a typical asian barley drink. Try this healthier version.
Ingredients: (serves 3-4)
200g Beetroot
60g Barley
2pcs Pandan Leaves
1300ml Water
50-55g Rock Sugar
Step by Step:
1. Rinse barley & pandan leaves.
2. Cut beetroot into thick slices.
3. In a pot, add in water, barley, beetroot and pandan leaves.
4. Bring to a boil and reduce heat to let it simmer for 1 hour.
5. Add rock sugar and boil for another 20 mins till it dissolves.
6. Serve warm or chilled.
