Air Fried Pandan Prawn

Simple dish. Usually we have Pandan chicken, but this time we tried Pandan Prawn. Each prawns are individually wrapped with pandan leaves. Prawns were succulent & still juicy, not dry at all. The flesh of the prawn are so fragrant with a hint of pandan aroma.

Ingredients :

8 pcs Medium Prawns

8 pcs Pandan Leaves

1 tbsp Cooking Oil


Marinade :

1pc Shallot - finely minced

1 stalk Lemongrass - finely minced (white part)

1/4 tsp Tumeric Powder

1/4 tsp Fish Curry Powder

1/4 tsp Sugar

2 tsp Coconut Milk

1/2 tsp Oyster Sauce

1/2 tsp Anchovies Powder

Dash of Pepper

1/4 tsp Salt


*You will need 8pcs toothpicks.


Method :

1. Clean prawns, devein, cut away rostrum (the sharp pointy thingy on it's head) & eyes. Or you might risk poking your fingers during wrapping.

2. Marinate prawns with above marinade ingredients for 4 hours or overnight in fridge.

3. Rinse pandan leaves on both sides and shake off excess water.

4. Wrap pandan leaves around it's body & seal with a toothpick by poking through it.

* Do wear gloves if you don't wish to stain your nails & fingers with tumeric colouring.

5. Arrange prawns on air fryer tray and brush the prawns n pandan leaves with some cooking oil.

Air fry for 6 mins at 175c.

(note : bigger prawns might need longer air frying time)

6. Remove & serve at once.
