Chicken Ham Mayonnaise Buns

Here's the easy hands-knead buns for your loved ones. Totally free of preservatives and artificial colouring.

Bread making is simple but we just need to practice to perfect it. Once you know the rules, you can basically make any types of bread or buns. Kneading the dough is important. If you don’t knead your dough enough, your bread would lack an airy, light texture. Over-kneaded dough gives you a hard bread texture.

Ingredients: (Makes 6 buns)

(A) 75g Bread flour

2/3 tsp Instant yeast

1 tbsp Castor Sugar

1/2 pcs Egg

65-75ml Warm water (Temp 42-43C)

(B) 75g Bread flour

1/3 tsp Salt

15g Butter (unsalted)

(C) 6 slice of Chicken Ham

1/2 pcs Egg (for egg wash)

1 tbsp Mayonnaise

Dried Parsley for sprinkles (optional)

Step by Step:

1. Bring butter & egg to room temperature.

2. Put 'A' in a bowl and 'B' in another separate bowl.

3. Add water into 'A", mix well using a spatula.

4. Pour in 'B' into bowl 'A'. Mix well till combined. Put dough on table for kneading. Knead until dough not sticking to hands. (If it's really sticky, add some bread flour to it)

5. Round the dough and put it back into the mixing bowl. Cover with cling wrap and let it rise until double it's size. Alternatively can put into oven at 40C temperature (fan mode) for about 25 mins for it to rise.

6.Once the dough already double the size, you can test whether the dough is ready.

(a) 'finger test' - dip finger into flour & poke into dough. Finger should come out clean & easy to poke in.

(b) Then you can 'degas' - by punching into the dough to release the air.

(c) 'window pane test' - Lop off a golf ball-sized piece of dough. Flatten the dough,hold it between both your thumbs and first two fingers, and gently spread the dough apart. If properly kneaded, the dough should stretch, without tearing or breaking, into a thin membrane that you can see through.

7. Divide the dough into 6 equal parts. Then you can shape your buns with the chicken ham according to your preference.

8. Put the buns on the baking tray, cover with cling wrap and let it rise again for about 30 mins. Alternatively can put into oven at 40C temperature (fan mode) for about 30 mins for it to rise.

9. Preheat oven at 180C using fan mode.

10. Brush egg wash and squeeze mayonnaise onto the bread dough. Sprinkle dried parsley.

10. Lastly, send the buns to the oven & bake for 10-12 mins.

*Baking time may vary depending on oven's type. If temperature too hot, you can cover the dough with aluminium foil after it has turned browned, then continue baking for the rest of the time.

* As bread are free of any preservatives, it is best to consume within 1-2 days.
