Last minute recipe for this cny... Easy to make & doesn't require much time to shape or mould. Can use up all the leftover egg whites from your previous bakes.
Recipe adapted from mykitchen101.com
Ingredients :
50g Egg White
25g Butter (melted in microwave for 1 mins)
25g All Purpose Flour (sifted)
60g Icing Sugar (sifted)
1/4 tsp Salt
50g White Melon Seeds
50g Pumpkin Seeds
50g Sunflower Seeds
2 tbsp Black Sesame Seeds (optional)
1 tbsp Black Sesame Seeds (sprinkle on surface) (optional)
Step by Step:
1. Preheat oven at 160C (Mine using 150C only)
2. Whisk egg white till soft peaks.
3. Add in melted butter & icing sugar. Continue to whisk for about 1 minute till combine.
4. Add in sifted flour & salt. Fold to combine.
5. Lastly add in all the seeds and mix till all seeds are fully coated with the batter.
6. Lay non-stick baking paper onto tray.
TIPS : (Must use non-stick baking paper such as GLAD. Normal parchment paper will stick and you can't remove at all) I tried that before, so I knew it.
7. Pour in seeds mixture onto baking paper & use a fork to spread a thinly layer. Sprinkle more sesame seeds on the surface.
8. Once done, put into pre-heated oven & bake for 22-24 mins or until golden brown.
9. Get ready a pair of scissors & thongs. Remove tray from the oven once done. Immediately cut to desired squares while it's still hot. Hands must be fast as brittles tend to be crunchy once it cool down. If it's cool down, it will just cracked when you cut it, so it won't gives a nice straight cutting.
Happy Baking.
