Fried Pumpkin


Many people tend to relate pumpkins as little more than just a Halloween decoration, but maybe it is time to rethink this plump, nutritious orange squash.

Pumpkin is an extremely nutrient-dense food, meaning it is chock-full of vitamins and minerals but low in calories.

Some health benefits of pumpkin :

- contains Vitamin A which helps boost vision, maintain healthy bones & teeth

- aids weight loss

- keep your skin wrinkle-free

- boost your immune system

- lower blood pressure

- high in fibre that helps keep you fuller longer

Today sharing an easy fried pumpkin recipe. Although pumpkin seems like very hard in texture, but it's really easily soften when cooked or fried. It has a mild sweetness and I personally think this fried pumpkin tasted better than fried sweet potatoes. I can eat this whole plate all by myself !! Yummylicious !!!

Ingredients : (serves 2-4)

About 300g Pumpkin - Skin & seed removed. Thinly sliced.

6 tbsp Rice Flour

3 tbsp All Purpose Flour

1/4 tsp Baking Powder

Pinch of Salt

Dash of White Pepper

Cold Ice Water

Oil for frying

Step by Step:

1. Remove skin & seed from pumpkin. Rinsed & sliced thinly about 1 cm thickness.

2. Mix rice flour, AP flour, baking powder, salt & pepper in a bowl.

3. Slowly add in water bit by bit into flour mixture while stirring occasionally to form a thick batter. The texture should be something that resembles a slight watery yogurt. Do not mix the batter till to thin as it won't stick and coat the pumpkin well.

* Do not mix the batter for too long, it will cause batter to become chewy.

* I can't give icy water measurement due to different brand of flour absorbs different level of water. So you need to adjust yourself.

4. Leave batter in the fridge for about 30 mins before start frying.

5. Heat up oil in wok. Dip pumpkin into batter and slowly drop into the hot oil.

6. Fry till both sides turns golden & dish up, place them on kitchen towel to absorb excess oil.

7. Serve hot while it's still crunchy.
