Pan Grilled Salmon with Tangy Mango Salsa


Love this refreshing tangy mango salsa paired with pan grilled salmon. 3 different flavour from this dish - sourness from the lime juice, sweetness from the mango flesh and chopped fresh mint leaves. What a great combination apart from the usual teriyaki sauce grilled salmon. Let's try this at home too.

You can make a bigger portion of the mango salsa and to be added to your favourite salad greens as toppings as well.

Ingredients: (serve 2)

2 pcs Salmon Slice

130g Mango flesh - cubes (room temperature)

2 pcs Limau Kasturi Lime - juiced & discard seeds (can use lemon juice too)

2 pcs Shallot - finely chopped

some Mint leaves - finely chopped

come red chillies - chopped (optional)

pinch of Sugar

pinch of Salt

some oil for pan frying

Step by Step:

1. Heat up pan & add some cooking oil.

2. Dab dry salmon slice & slowly put onto pan. Sprinkle some salt on the flesh while grilling. Grilled till meat turn light golden on each sides. About 3-4 mins on each sides.

3. Remove salmon slice & set aside.

4. In a bowl, put in cubes mango flesh, lime juice, chopped shallot, sugar. Mix well.

5. Finally, add in chopped mint for a final mix before serving.

6. Arrange cooked salmon slice onto plates & slowly pour over mango salsa on top.

7. Serve immediately.
