A nutritious bowl of hot soup for the rainy season nowadays. Simple ingredients and easy to prepare. Peanuts will be pre-soaked & boiled till tender and soft.
Peanuts or better known as groundnuts are highly nutritious. It is rich in Vitamin E that helps protects your skin, helps regulated blood sugar, good source of protein & high in anti-oxidants to fights against free radicals. Many thought that peanuts are bad for health but it's actually contains good fats and high in fibre which aids in maintaining optimal weight.
In addition to delicious, cuttlefish is rich in nutritions and high in protein, minerals and various vitamins. Important mineral in the cuttlefish is natrium, potassium, phosphorus, calcium, magnesium and selenium. Calcium and phosphorus are useful framework for the growth of bone, so it is important to the growth of children and preventing osteoporosis in the elderly. Besides rich protein, squid is also a good source of vitamins such as vitamin B1 (tiamin), B2 (riboflavin), B12, niasin, folat acid and fat soluble vitamins (A, D, E, K). A serving of dried cuttlefish (25g as per in my recipe) contains 28mg of cholesterol & 93mg of sodium. Hence, those with cholesterol health concern should eat in moderation.
Ingredients: (serves 2-3)
140g Dried Peanuts (Groundnuts)
25g Dried Cuttlefish
10pcs Dried Red Dates (pitted)
230g Pork Meat Bones
1.1L Boiling Water
Salt to taste
Step by Step:
1. Rinse & soak dried peanuts & dried cuttlefish for about 12hrs. (I soaked mine overnight - kept in fridge)
2. The next day, discard soaking water & rinse clean.
3. Blanch meat bones in a small pot of hot water to get rid of bloody water. Rinse clean.
4. Put all ingredients & water in the double boiler.
5. Let it double boiled for 3 hrs. Season with salt before serving.
6. Ready to serve.
