Fried Arrowhead Chips (Nga Ku Chips)

The arrowhead also known as swamp potato comes into season and is often associated with the Chinese spring festival. Enjoy it by simply frying them and I would say this taste even better than potato chips. It's definitely more economical to fry it at home rather than store bought ones.

Ingredients:
Arrowhead bulbs (nga ku) Salt to taste Oil for deep frying
Step by Step:
1. Wash and skin arrowhead using a peeler leaving the stem head.

2. Holding the stem head, slice the arrowhead thinly using a mandolin slicer.

3. Heat the oil in a wok and deep fry the slices of arrowhead to a light, golden brown colour.

4. Do not overcrowd the wok when frying. Dish out and drain on paper towels.
(I'm frying small quantities that why I used only little bit oil. Don't want to waste oil or having a lot recycle oil). If you are frying alot, you can put more oil, faster in a way.

5. Lightly sprinkle some salt over the arrowhead slices.
6. Allow to cool completely before storing in an airtight container.
