German Butter Cookies - Assorted Flavours


Originally german butter cookies is just plain light yellowish in color. To make it more colorful, I added few flavours to give them some assortment.

I just want the colors and not really about the taste as I still prefer to taste the original buttery taste. I used natural colouring / flavouring instead of artificial colouring.

Green tea powder gives a nice green hues, beet root powder gives a sweet pinkish shades and cocoa powder gives a soft brownish tone.

Ingredients: (yields about 110 pcs)

250gm butter (I'm using salted butter Anchor brand)

80gm icing sugar - sifted

250gm potato flour - sifted

160gm superfine flour - sifted

Assorted colouring flavours : choice of -

1/4 tsp - 1/2 tsp : Cocoa Powder / Beetroot Powder / Green Tea Powder

1 tsp - Black Sesame Powder (put black sesame in blender & blend till fine powder)

(You can add more if you want a darker colour)

Note that color will be slightly darker a bit after baking.

Step by step :

1. Beat butter & sugar till fluffy & pale.

2. Sift in potato flour & superfine flour & mix thoroughly to form a soft dough

3. Divide dough into half and mix your preferred flavour. Use a spoon to mix till well combined.

4. If you find the dough is too soft to handle, put in the fridge for 10 minutes.

5. Then take out from fridge & start to shape it. Now the dough should be harden & easy to handle.

6. Weigh dough about 7gm each, roll it into a ball & place it onto tray.

7. Prepare a small bowl of clean water and a fork. Use the fork to press slightly on the dough to make the pattern on the cookies. Wet the fork in the water after few presses to prevent dough from sticking to the fork.

8. Once done, put the tray of cookies in the fridge for about 5 minutes. (Only when you see the cookies dough getting soft & melting if you take a very long time to shape & mould it).

9. Then, bake at 150 degree for 20-25 minutes put at the lowest rack. (Top & bottom heat, no fan)

10. Leave them to cool down properly before you transfer into containers.
