Bought a bottle of yellow curry powder at Bangkok's market sometime ago and decided to cook Yellow Curry Pork. Super tasty & mild curry flavour, not so spicy. Easy to use.
So I'm trying to cook Yellow Curry Pork with these. Turn out to be a yummy dish & all wipe out clean. The pork & egg soaked up all the yellow curry flavour.
Ingredients : (serves 3)
220g Pork Shoulder Meat / Chicken Meat
1 Egg
1 Yellow Onion - sliced
3 tsp Yellow Curry Powder mix with 1 tbsp water to become paste
14 tbsp Water
1/2 tsp Salt
1 tbsp Oyster Sauce
1 tsp Fish Sauce
3 tbsp Cooking Oil
Spring onions (for garnishing)
Marinate:
2 tsp Light Soy Sauce
1/2 tsp Salt
1/2 tsp Corn Flour
1 tsp Sugar
Dash of pepper
Step by Step:
1. In a heated pan with oil, add in yellow curry paste. Saute till fragrant for about 1-2 mins on low heat.
2. Add in onions & and stir for a minute.
3. Then, add in marinated pork slice & saute till pork almost cooked.
4. Add water, salt, oyster sauce, fish sauce & let it simmer a while for about 2-3 mins. Let the pork slice to absorb the curry flavour.
5. Finally crack an egg and let it cook awhile till half way done. Do not stir it. Let it cook for about 30 secs.
6. Use the spatula to flip the egg & break the egg yolk & let the egg continue cooking.
7. When the egg is fully done, stir to mix with the pork.
8. Remove & garnish with spring onions. Serve hot.
