Five Flavours Stewed Pork Ribs


In the mood to try something new today. Simply tried by making this combination & end up something that taste interesting. So many kind of many taste you can find in this dish. Why I said so?

The smoky aroma & the sweetness from the Gula Melaka, the intense fragrance from the Kaffir Lime leaves, slight spicy from the chillies, salty flavour from salted bean paste, slight sour from the vinegar and of course the tender pieces of pork ribs that has absorb all the flavours that I just mentioned.

So, I named this Five Flavours Stewed Pork Ribs. Combinations of Thai, Nyonya & Chinese flavours perhaps!!

Ingredients : (serves 2)

360g pork ribs (cut into small pieces)

300ml water

1 1/2 tbsp Gula Melaka

2 tbsp salted bean paste (taucu)

1/2 tsp soy sauce

* 1/4 tsp dark soy sauce (optional)

* 2 pcs green chilli padi (optional for extra spicyness)

4 pcs dried chillies, soaked till soften

3 cloves garlic, finely chopped

3 pcs shallots, finely chopped

3 pcs fresh kaffir lime leaves, cut into thin strips

1 tbsp vinegar

2 tbsp cooking oil

salt to taste

Step by Step:

1. In a heated pan, add cooking oil & fry minced garlic & shallot till fragrant.

2. Then add in soaked dried red chillies & salted bean paste (taucu). Let it fry till fragrant.

3. Add in pork ribs & mix evenly for about 1 minutes.

4. Add in water & stir evenly. Bring to boil.

5. Reduce to low heat, add in Gula Melaka, soy sauce, vinegar & dark soy sauce*(optional). Let it simmer for about 20 minutes. You will see the gravy dried up a bit. Continue stirring once a while so that the pork ribs are evenly cooked.

6. Then add in green chilli padi (optional) & kaffir lime leaves. Let it cook for another 8-10 minutes.

7. Salt to taste.

8. Remove & ready to serve.
