This is not the most delicious soup but I can tell you that this is the healthiest soup to have for some weight watchers like me. Low in calories & most importantly, healthy soup.
Ingredients : (serves 3)
1 small cauliflower about 310g, cut into small florets
1 small Onion, thinly sliced
1 1/2 tbsp Butter
100ml milk
Salt to taste
450ml chicken stock
Ground black pepper
Step by Step :
1. Warm the olive oil in a small pot. Saute the onion over low heat without letting it brown for 5 minutes.
2. Add the cauliflower, salt to taste and 150ml chicken stock. Raise the heat slightly, cover the pot & let it stew for 5-8 minutes or until the cauliflower is tender.
3.Then add the balance of chicken stock, bring to a low simmer & cook for additional 15 minutes uncovered.
4. Turn off the heat & working in batches, puree the soup in a blender to a very smooth creamy consistency. Let the soup stand for 20 minutes & during this time, it will thicken slightly more.
5. Add in milk & thin the soup with some hot water (if you think it's too thick). Otherwise just reheat the soup. Keep stirring to prevent burnt at the bottom.
6. Serve hot & sprinkle some ground black pepper or drizzle with some olive oil.
