Tuna Porridge


"Eat clean for a start of the day"

My favourite !! Yes, I can eat it everyday. Rice Congee or porridge or the Cantonese called this as "jook", is consume in many Asian countries. Porridge is healthy as less oil is use. This can be consume anytime of the day but in Asian counties, this is mostly serve as breakfast staple or you can definitely find them in the dimsum menu.

Cooking this time, my all time favourite - an easy to prepare porridge with Ayam Brand Tuna Chunks in Olive Oil. Basically, there's 2 types of porridge. The thick creamy type of porridge is Cantonese style while the runnier type is Teo Chew style.

The water is the main concern in cooking a nice bowl of congee / porridge. It all depends on the consistency you want to achieve. I can't tell you by how much. It all depends on the size of your pots. Experiment! Begin with less water because it is easier to add water if needed.

Carrots give the extra sweetness in the porridge. Add more if you like carrots.

Ingredients : (serves 2)

1/2 can Ayam Brand Tuna Chunks in Olive Oil

100g rice

2 shallots, thinly sliced

half carrot, grated

4 tbsp cooking oil

800-1000ml water

Salt to taste

Step by Step:

1. Rinse rice & put them in Queen's Xense Casserole or a pot that is big enough to boil your porridge.

2. Add 1 tbsp cooking oil & pinch of salt to the rice & stir to mix evenly. This step is to make your porridge turn out smooth.

3. Then add in water, shredded carrots & leave the casserole uncovered to prevent over-flow when it boils.

4. Bring to boil & reduce to low heat. Keep stirring once a while.

5. Let it simmer slowly until porridge is fully cook for about 30-40 minutes. (depends on type of rice used)

5. In the meantime, in a heated pan with 3 tbsp cooking oil, fry sliced shallots till golden brown. Then set aside.

6. Cook until desired consistency is achieved, add in tuna chunks. Use a spoon to slightly press the tuna chunks to make it into smaller pieces. (I'm using only 1/2 can of the tuna, you may add more if you like)

7. Let it cook for another 5 minutes & add salt to taste.

8. Ready to serve & garnish with crispy fried shallots & spring onions.
