Winter Melon Sweet Corn with Dried Scallops Soup

Wintermelon is a great food if you are thinking to consider drinking soup to lose weight. Wintermelon is extremely nourishing & cooling in nature. It also aids in detoxification.
It is called 冬瓜 (dong gua) in chinese and is a very big elongated fruit with thick dark green skin. Normally sold in wet market whereby you will request the seller to cut a slice for you.


This soup gives a mild sweet taste from the wintermelon & sweet corn. Very refreshing.
Ingredients : (serves 2-3)
200g pork ribs
300g Wintermelon - skin removed
1pc Sweetcorn, clean & cut into small pieces
2pcs Dried Scallops (big size)
6-10pcs Dried Red Dates, seed removed
1.8 liter of water
Salt to taste
Steps by Steps:
1. Peel & cut the winter melon into small pieces.
2. Blanch pork ribs in hot water for 10 minutes & remove.
3. In a pot, put water and all the other ingredients & bring to boil.
4. Once boil, turn to low heat & let it simmer slowly for 2 hrs.
5. Add salt to taste & serve hot.
