Thai Style Kerabu Squid

Thai Style Kerabu Sotong, a sweet & sour dish. Very appetizing for those craving for some Thai food or Asian flavour. Lemongrass & kaffir lime leaves enchance the flavour of this dish.

Here's the recipe, as easy as 1-2-3.

Ingredients : (serve 2)

3 squids

1 stalk lemongrass, thinly sliced the bottom near the stem only

2 kaffir lime leaves, thinly sliced

2 shallot, thinly sliced

1-2 chilli padi, thinly sliced (adjust to your level of spicyness)

Seasoning sauce : (mix together till sugar melted)

2 teaspoon fish sauce

1 teaspoon white vinegar

2 teaspoon sugar

3 limau kasturi, squeeze juice & seed removed

Step by Step :

1. Clean squid. Remove the thin black film & inside of the squid. Cut into rings about 1cm thickness.

2. Mix seasoning sauce & add in all other ingredients. Set aside.

3. Meanwhile blanch the squid for about 2-3 minutes or till squid is fully cooked. Remove & toss dry.

4. In a bowl, mix cooked squid with all the seasoning sauce. Stir well.

5. Ready to be serve.

Tips : Eat squid in moderation as squid contains high level of cholesterol.
