Creamy Mushroom Soup


Would you like to have a bowl of hot creamy mushroom soup? Mushroom soup, a great starter before having any main course which most people would prefer to have. I never knew making mushroom soup is that easy until I try to cook it on my own. Make this for your love ones in this Valentines Day to compliment the main course that you are cooking. Even good for an afternoon tea or snack for your kids when they are back from school. After this, you will forget those canned stuffs. Yes, really...

Ingredients : (serves 2-3)

3 tablespoon butter

3 shallot - finely chopped

150gm white button mushroom - thinly sliced.

5 tablespoons Cooking cream

400 ml Chicken broth (Or use water + 1/2pc chicken cube)

Salt & pepper to taste

35g all purpose flour

Steps by Steps:

1. Melt butter in a heated small pot or large saucepan.

2. Add chopped shallot & fry them till fragrant & soft.

3. Add in button mushroom & continue to stir until mushroom shrink (about 2-3 minutes.

4. Sprinkle in all purpose flour & stir evenly for about 1 minutes.

5. Pour in chicken broth & keep stirring to prevent clumpy at the bottom of the pot. Let it simmer for about 15 minutes at low fire.

6. You will notice the soup slowly get thickens. Add cooking cream for a creamy texture.

7. Add dash of salt & pepper to taste.

8. Pour mushroom soup into food blender & blend till creamy texture. If you want some chewy mushroom to bite, you can just blend half of it. (If you like it as it is, you can just serve without blending it)

9. Pour to serving bowl. Ready to serve. Serve hot.

10. Optional : Garnish with olive oil, drizzle some fresh milk & parsley/mint.

Tips : You can add / reduce the amount of all purpose flour. The flour thickens the soup.
