Another great recipe to share for your CNY cookies list. German butter cookies - taste buttery, soft texture, fluffy & definitely melt in your mouth. You will sure asking for more.

This year 2015, is the year of Sheep. So I'm making something special & cute to welcome the Chinese New Year 2015.

Try this, simple & easy to make recipe. No eggs needed.

Ingredients: (yields 48 little sheep)

Recipe adapted from Ms Sharon Khor.

125gm butter (I'm using salted butter Anchor brand)

40gm icing sugar - sifted

125gm potato flour - sifted

80gm superfine flour - sifted

chocolate chips - for decorate the 'ears'

black sesame - for decorate the 'eyes'

Steps by steps :

1. Beat butter & sugar till fluffy & pale.

2. Sift in potato flour & superfine flour & mix thoroughly to form a soft dough.

3. If you find the dough is too soft to handle, put in the fridge for 10 minutes.

4. Then take out from fridge & start to shape it. Now the dough should be harden & easy to handle.

5. Each sheep head weigh about 7gm, roll it into a ball & slightly flatten it.

6. Make 2 little small balls for sheep fur. Gently stick on centre & use a toothpick to press a line in the centre of the small balls.

7. Then decorate the eyes & the ears with chocolate chips & black sesame seeds.

8. Put the tray of little sheeps in the fridge for 5 minutes. This is to make the dough harden a bit, as we had already taken a long time to decorate the sheep, the dough is almost melting.

8. Then, bake at 150 degree for 20-25 minutes. (Top & bottom heat, no fan)

9. Take out & cool down before you put in container.

Tips : You can always make it into other shape, just be creative. You can also pipe it out into beautiful flower or roll it & use cookie cutter to cut into your desired shapes.

HAPPY CHINESE NEW YEAR 2015

Hi @andthenhow Oh I thought you were asking replacing potato flour with all purpose flour. Ok I get what u mean now. You can use below types of flour: (Cake Flour/Super Fine Flour/Pau Flour/Low Protein Flour) No need to feel sorry. It’s okay. We are learning from each other too. And I’m just sharing from my experiences.

Thank u so much for your reply so fast!

Ur recipe calls for both potato n superfine flour. I cant find any super fine flour... I mean flour with e words super fine or fine on e packaging. So if all purpose flour cannot use... what would u recommend? Cake flour can?

So sorry that I sounded like so dumb here... I'm really very new to baking.

Very grateful for ur reply n help

Hi You can use unsalted butter with a pinch of salt will do. I never tried sweet potato flour before, not sure any difference. Do not use all purpose flour as it will affect the cookie texture, it will ended up like normal butter cookies (hard & crunchy). The characteristics of this cookie is that it will melt in the mouth. And only potato flour can gives such texture.
