Basque Burnt Cheesecake

Inspired by a Basque version, this is the cheesecake that wants to get burnt, cracked, and cooked at high heat. Which also means this is the cheesecake that’s impossible to mess up.

Simplest recipe, easiest to prepare, failed-proof recipe, most important a delicious cheesecake to be ready in 7 hours.

Ingredients : (makes a 6" cake tin)

250g Cream cheese

80g Castor Sugar

3 nos Eggs

125g Whipping Cream

10g Superfine Flour

Step by Step:

1. Combine cream cheese & castor sugar in a bowl, whisk till smooth and creamy.

2. Add egg one by one and continue whisking till incorporated.

3. Pour in whipping cream & whisk till well mixed.

4. Add in flour & mix till smooth mixture.

5. Pour into 6" round pan lined with parchment paper. Use only 1 big piece of parchment paper. No joining or separate pieces as the batter is quite watery. You don't want a leakage after all.

6. Bake at preheated oven 220C for 30 mins. (note to self : I'm baking at 200C for 35 mins).

7. Once out from oven, carefully remove cake from the pan by gently lifting up the parchment paper. Let it cool down for an hour.

8. Transfer to fridge to chill for at least 6 hours.

9. Carefully remove parchment paper & ready to serve.
