I simply love using banana leaf for creating this dish as it makes the seafood more fragrant! This dish is simple to prepare & cook.
Ingredients : (Serve 2)
2 medium Squid
7 medium Prawn
2 Shallot - cut into wedges
1pc Banana Leaf
3 tbsp Nyonya Sauce
Marinate :
pinch of salt & sugar
dash of pepper
4 tbsp Nyonya sauce
Step by Step:
1. Clean the sotong, pull the remove the head, the innards and the transparent 'bone' inside the sotong. Remove the outer layer of skin. Cut into rings.
2. Rinse prawn & cut away the tentacles.
3. Marinate prawn & squid with above seasoning ingredients.
4. Cut a piece of banana leaf the size of the Queen Xense Double Pan. Wash the banana leaf & wipe dry.
5. Heat up the pan with medium-high heat. Layer with banana leaf, then add in prawn and sotong into the pan.
6. Spoon balance 3 tbsp Nyonya sauce onto the seafood. Finish with cut shallot on top.
7. Close the cover and cook for about 6-8 minutes or until prawn & sotong is completely cooked.
8. Remove & serve hot.
